The ftalks23 keynotes and round tables have revolved around four thematic blocks: Resilient and Regenerative Food System, Future Market Trends, New Proteins and Innovation in Retail and Gastronomy. The future became palpable with topics such as molecular agriculture, regenerative food, AI applied to farming, precision fermentation or cultured meat.

Smart labels for monitoring food; plant-based pastrami, ham or sashimi or technology to understand consumer reactions to food were some of the proposals.
A gastronomic experience created under the concept of the “Future of the food system value chain” with a menu of 30 dishes made with innovative, healthy, and sustainable foods from participating startups. This dinner has been certified by Chefs' Manifesto, an initiative supported by the UN in line with the SDGs and formed by more than 1,000 chefs from around the world.
